Homemade Chicken Noodle Soup?

I have a recipe that I love but it calls for simmering an entire chicken for about two hours, then I am supposed to de-bone the chicken. I then return the chicken to the stock and season it.

For health reasons, can I just boil chicken breasts for a long time instead? I have heard that the bones give flavor, etc., but I HATE de-boning the nasty little bird! It gives me the creeps.

Any help is appreciated!!

It is different eating a piece of chicken on my plate versus seeing a dead bird floating in boiling water. You should see me on Thanksgiving shoving my hand up unmentionable areas of poultry while trying SO HARD to not urp all over the bubbly-skinned thing!

Just fry the chicken breast in olive oil in the same pan you’re gonna make the soup in until browned then add chicken broth and spices scrap the bottom of pan with spoon to get all the drippings stired through then add your celery and what ever else you add and of course your noodles this came out really good for me one day I didn’t want to cut the chicken off the bone either that day felt lazy
